Introducing “The Biryani” :-


From the age of hundreds of years ago to the generation of today's date, the “Biryani” is

a mouth watering word to feel hungry for, and if you are in front of that, then the condition is

uncontrollable, this is how much we love it.


It is a special dish steamed cooked with rice, some spices and meat over open fire in a

clay pot.

 

Once the Mumtaz (wife of shah jahan) the mughalai Queen visited the army battalion and

found that the soldiers were very weak and some were not able to walk. She asked the chief

chef to make a special dish that combined meat and rice to provide a good amount of

vitamins and proteins with other essential nutritions to them. And the final result was BIRYANI.

Recipe, rice was fried in ghee without washing for some soil or cracky flavor that will prevent

rice from clumping to each other. Before cooking it, the meat, and some special species were

added and were cooked in a wood fire”.    


The hydrabadi Nizam and the Nawab of Lucknow were also famous for their own biryani

flavor  which was developed by their superior chefs.some of them were using desi tadka

style and some of them were fond of different types of spices and many other things.


The best biryani is made up of correctly measured amounts of ingredients and a well standard

practice technique. Our country is having different type of taste within biryani only like the

Northern part of india uses long grain brown rice which is traditionally used for biryani only

but today that rice replaced by fragmented rice like basmati rice, and same in the southern

india also previously the biyani was made up of their local variety of rice which lend their own

taste and texture in the dish but today they are using some other variety of rice. 

   

India is having very vide variety of Biryani but we are listing mainly major types of Biryani by which the others are evolved :-

  1. Kolkata biryani :- It is very light food, does not contain any flavor, color or essence and has very light spices just for taste and some added potatoes.

 

  1. Lucknowi Biryani :- Also known as “Awadhi Biryani”, An aromatic dish made up of meat, spices, saffron, flavored rice and sometimes nuts and milk also.

  1. Hyderabadi biryani :- Also known as “kutchi biryani” where half boiled rice mixed with layered onion and meat with little  bit of water in a “Handi”.

  1.  Kashmiri Biryani :- Rice and meat including yogurt, fried in ghee spreaded saffron and mixed with aromatic spices.

  1. Malabari biryani :-  Also known as “thalassery biryani” Served and palate with fish and best paired with raita.
